Fresh never frozen!

Wahoo is a rare and very delicious catch, Eric’s favorite fish (if he had to pick one…)! The firm, mild-tasting fillets are traditionally cut into steaks. (Note- When cut into steaks, there may be a bone in the center depending on the size of the fish.)

There is no wrong way to prepare Wahoo, except to overcook it! Wahoo is excellent served as sashimi, ceviche, sushi, or grilled.  

We typically catch Wahoo trolling planer rigs off the SE Florida coast on the edge of the reef line, and on rare occasions harvest them by speargun.

Please note, we try our best to get the fillet weight as exact as possible.  However, since all fish are different sizes, the weight of your fillets could be + or - 0.2 lbs.
