Fresh never frozen!
Amberjack yield mild, hearty white fillets that hold up well on the grill, or however you choose to prepare it. These fillets are often smoked for fish dip as well.
We harvest our Amberjacks by speargun off the reef lines and shipwrecks off the SE Florida coast.
Please note, we try our best to get the fillet weight as exact as possible. However, since all fish are different sizes, the weight of your fillets could be + or - 0.2 lbs.
