African Pompano fillets are white meat that cook up nicely blackened or broiled. We would describe it as a cross between Snapper and Cobia meat.
We harvest our Pompano primarily by speargun in Federal waters off the coast of NE Florida. Occasionally we catch them by hook and line in State waters.
Please note, we try our best to get the fillet weight as exact as possible. However, since all fish are different sizes, the weight of your fillets could be + or - 0.2 lbs.
